Easy Ube Basque Cheesecake (In the Air Fryer!)

My air fryer is one of the most used kitchen appliances, doing everything from reheating frozen Korean corn dogs to roasting sweet potatoes. But one of my FAVORITE things to make in the air fryer is a BASQUE CHEESECAKE.

That deep-dark brown top layer of a basque cheesecake gives that nice, caramel-like flavor, and the inside is INCREDIBLY creamy and melts. The addition of cooked ube adds its signature pastel purple color and lovely, earthy flavors to the dessert.

The recipe is inspired by and adapted from What To Cook Today’s Easy Durian Basque Cheesecake.


Prep time: 10 minutes l  Cook Time: 20 minutes

INGREDIENTS:

  • 1 block of cream cheese (226 grams)⁣

  • 40 grams sugar⁣

  • 200 grams cooked ube⁣

  • 12 grams sweet potato starch (you can also use either tapioca starch or corn starch)⁣

  • 125ml heavy cream⁣

  • 3 large eggs⁣

DIRECTIONS

  1. Place all ingredients in a blender and blend until smooth.⁣

  2. Pour the batter into a parchment-lined cake pan with a removable bottom. Be sure to get a cake pan that fits in your air fryer.⁣

  3. Place the cake pan in the air fryer basket and bake for 10 minutes at 400 F and then lower temperature to 350F for 11 minutes. If you prefer a more firm inside, bake for 2-5 minutes more at 350F.⁣

  4. Let the cake cool down completely by putting it in the refrigerator for a few hours, or overnight.⁣

  5. Eat your feelings as it is, or with a side of whipped cream or ice cream!⁣
